Lentil & SPinach Curry

1 cup washed lentils or chick peas
Spinach - 1 cup
Lentil Masala ( or curry in a ajar or make your own mixture as per below)
Lime or Lemon - 1 Tblspoon
Coconut Oil - 1 table spoon
Noodles or rice of your choice ( soba, gluten free quinoa noodles, brown rice etc.)
Method to cook:
In a saucepan heat the coconut oil, sautee onion. Add Lentils & tbspn of Lentil Masala
Stir for 1 min.
Add 1-1/2 cups water
Cover & cook until lentils are cooked well. Add 1/4 cup coconut milk and 1/4 cup water if sauce is too thick for you! Add spinach & lemon or lime juice! Cover & simmer a mother 5 min on low heat...
Serve with noodles or rice & side dish if you like!
