Get ready for Father's Day! YUMMy Pancakes & good for you too!
INGREDIENTS: 2/3 cup millet or sorghum flour 1/3 cup tapioca starch 1/2 tsp baking soda 1/4 teasp sea salt (4 large eggs) can substitute more coconut milk instead to be egg-free 1-1/2 tsp chia seeds or poppy seeds 1/2 cup almond milk or similar 1/2 cup coconut milk 1 Tbsp lemon juice or finely grated lemon zest {Coconut oil for the pan} DIRECTIONS: In a large bowl whisk together the dry ingredients In a medium bowl do the wet stuff...chia seeds, eggs, coconut & almond milk Add wet mixture to the flour mixture; stir until blended. Heat a small skillet over medium heat add the coconut oil, pour about 1/4 cup of the mixture into the pan or adjust to the size of pan and thickness desired! Turn over and cook about 1 minute or until desired golden brown colour! *Makes Approx 10-12 pancakes ( our the batter thinner & less to make more & smaller pancakes in a small pan) Repeat and freeze if you have extra left over for tortilla type rolls as savoury or sweet snacks!

Onion chopped Coconunt Milk Spinach - 1 cup Lentil Masala ( or curry in a ajar or make your own mixture as per below) Lime or Lemon - 1 Tblspoon Coconut Oil - 1 table spoon Noodles or rice of your choice ( soba, gluten free quinoa noodles, brown rice etc.) Method to cook: In a saucepan heat the coconut oil, sautee onion. Add Lentils & tbspn of Lentil Masala Stir for 1 min. Add 1-1/2 cups water Cover & cook until lentils are cooked well. Add 1/4 cup coconut milk and 1/4 cup water if sauce is too thick for you! Add spinach & lemon or lime juice! Cover & simmer a mother 5 min on low heat... Serve with noodles or rice & side dish if you like! Enjoy!
